Chimay

Look: Pours a hazy golden straw color with a beautiful, billowing, satin white head of foam that laces the glass exquisitely.

Smell: Yeasty. I'm getting bananas, white pepper, bubblegum, rosemary, clove, and notions of lemon rind and orange.

Taste: Follows the nose. Floral upfront with notes of corriander. Very clean and crisp. Mildly bitter. Lots of banana, lemon, clove, white pepper and bubblegum. Notes of sweet bread and honey. Dry on the finish.

Feel: Mid-Heavy body, somewhat creamy. Highly carbonated.

Chimay Brewery ("Brasserie de Chimay") is a beer brewery in Chimay, southern HainautBelgium. The brewery is located in the Scourmont Abbey, a Trappist monastery, and is one of the eleven breweries worldwide that produce Trappist beer. They make three ales: Chimay Rouge, Chimay Bleue, and Chimay Blanche; and they make one patersbier, intended for the monks. The monastery also makes four varieties of cheese.
